"I PROMISE YOU'LL EAT THE WHOLE BOWL" PAD THAI

All of you beautiful souls voted to have this posted, so here it is. Not only will you eat the whole bowl, you'll go back for seconds and dream about eating the leftovers the next day.


I N G R E D I E N T S

  • 2 peppers julienned

  • 4 large carrots shredded

  • 1 package of rice noodles

  • 4 tbsp green onions

  • 1/2 cup  crushed cashews/almonds

  • OPTIONAL: chicken, shrimp, tofu, etc.

#eatyourfridgetip: Ingredients can be swapped out for whatever vegetables and noodles you have in your fridge/pantry!


Pad Thai Sauce:

  • 1 lime freshly squeezed

  • 1/2 cup tamari/coconut aminos (@nakedcoconuts)

  • 1/4 olive/avocado oil

  • 2 tbsp almond butter (@nutstoyou)

  • 2 cloves of garlic

  • 1 tbsp maple syrup/raw honey

  • 1 tbsp fresh ginger, minced

  • 1/2 Thai Chili diced or 1 tsp red pepper flakes

  • Salt and pepper to tastes


H O W T O M A K E T H E M A G I C

  • Combine all Pad Thai Sauce ingredients in a bowl/jar & mix together until runny-thick; Thin out with water if needed.

  • Cook rice noodles, drain, rinse & set aside.

  • Drizzle coconut oil on frying pan set to medium-high heat.

  • Sautée red pepper & carrots until desired texture, and then add rice noodles back into the pan to reheat.

  • Pour Pad Thai Sauce over rice noodle mixture, toss.

  • Transfer to serving bowl, add in green onion & cashews/almonds.

  • Transfer to plate & enjoy!
