Chocolate + Pistachio Matcha Bites

If you're anything like me and my clients, having quick grab & go snacks on hand is essential! For this reason I always love to have some sort of bitesized snack in the fridge/freezer ready to go at anytime. This way I am never sacrificing flavour or the integrity of my mindful eating rituals.


The chocolate and cookie dough like texture of these makes them delicious, the pistachio's and matcha make them nutritious, and the 10 min prep with no cook time makes them simple to make!



Chocolate + Pistachio Matcha Bites

PREP TIME: 10 mins | YEILDS: 16 bites


ingredient list

  • 1/2 cup dried apricots

  • 1/2 cup pistachios

  • 1/4 cup sunflower seeds

  • 1/4 cup almond butter

  • 1 tbsp coconut oil, melted

  • 1 tbsp honey or maple syrup

  • 1–2 tsp matcha powder

  • 1/4 cup gluten free chocolate chips/cacao nibs

  • pinch of salt


how to make the magic

  • process apricots in a food processor (or high speed blender) until consistency is a sticky paste-like texture

  • add the rest of the energy ball ingredients and process until well combined.

  • taste and adjust for sweetness + salt.

  • scoop out into a heaped teaspoon + roll into 1" balls.

  • place in fridge to set for at least an hour.  

  • store in air tight container in fridge for up to a week or freeze for longer shelf life.
